Discovering Regional German Foods
Deb Korting is heading up the kitchen team this week. While traveling in the southwest German city of Idar-Oberstein, she learned about its history as the Gem Capital of Germany. In the 1800’s when local miners returned to Germany from South America after searching for new mining options, they brought to the city the method of open fire, churrasco meat grilling. Thursday’s menu is inspired by Spiessbraten, a dish of pork marinated in sliced onions and spices, then grilled over a wood fire.
Menu: Grilled pork skewer topped with marinated, sauteed onions; Sweet and Sour Kraut Salad from the recipe files of Marilyn Metzger, Melinda Green’s mother; and Potato Salad - $14. Dessert: German Chocolate Cupcakes - $4
